Savoury Oatcakes with Wild Carrot Seeds

I love the punchy, spicey, carroty, almost aniseed flavour of wild carrot seed. Just remember to take just a few from each plant…

Picnics, al fresco dining, and easy snacks – who wants to be slaving over a hot stove with the weather being good enough to go out and enjoy! These oatcakes store well, are easy to make, and are perfect for wild summer eating. Eat them alone, with cheese or a topping of your choice…

Yippee – they’re filling & the mixture makes quite a lot!

 

SAVOURY OAT BISCUITS with wild carrot seeds

  • 360g oatmeal (or oats ground in food blender)
  • 100g spelt or wholemeal flour
  • ½ tsp sea salt
  • ½ tsp baking powder
  • 65g butter
  • 1 egg
  • Enough milk to fill a ¾ cup after the egg has been cracked open in the ¾ cup
  • 3 seed-heads worth of fresh carrot seeds or ½ dessert spoon of dried.

 

Instructions

Pre-heat oven to 200°C. Mix dry ingredients together and combine with butter. You can rub the butter in with your hands, or combine the lot in a food processor. Add egg and milk mixture and mix for 3 minutes. The dough should be firm enough so it can be rolled out. Add a bit more flour or a bit more milk if necessary. Roll dough to approximately 3 mm thickness, cut out and bake for 15 to 20 minutes. Leave to cool. Serve with cheese and or fruits.

Serving Suggestion
As a dessert course, we had various oatcakes with wild ingredients with a selection of Cornish cheeses, crispy fried seaweed ( the black stuff in the photograph) and wild salad with dressing.
