Wild Food Foraging - Cultivating Skills &

Big Bellys ~ Wild Venison & Sea Buckthorn Tart

Big Bellys – what a great title for a food stall I thought, as I grazed around the Dartington Food Fair last month. Having been invited to lead Foraging Walks, I needed fuel & inspiration to keep me going between groups throughout the day.

 The simple layout of a huge range of savoury tarts caught my eye, as did the range of wild fillings & two creative sisters manning the stall. I don’t often see this daring & wild theme through dishes, ooh, and Wild Venison & Sea Buckthorn Tart – well my choice was made!

The fruit of Sea Buckthorn (Hippophae) are considered a super food, juicy, tart & extremely rich in Vitamin C (about 15 times that of oranges) as well as containing several B vitamins. Growing wild on coastal areas, it’s something I’ve tasted here in Cornwall from late summer, and if you’re lucky can even be found in winter.

However, despite the appealing health benefits, personally I’m not a fan of the taste of sea buckthorn, it’s just sooo tart. Now, with a different tart in my hand, I was intrigued to find out if I liked the combination.

Big Bellys are based in Bideford, Devon and can be found at many Food Fair across the South West, and beyond. Of their savoury tarts they say;

” we have a passion for the wild and foraged. Our recipes change depending on what’s in season, that can be locally and ethically sourced. Visit us to experience the culinary adventure of our melt-in-the-mouth pastry and deep filled hearty tarts”

Meanwhile, back to my tasting… Well it was good. The strong taste of wild game (which I adore) was mellowed by the subtle berry flavour which perfused the creamy egg base of the tart. Big Bellys do have a warning with their tarts though – that one is rarely enough! Fortunately I was at a Food Fair, and therefore had belly space to try other stalls too. My next challenge; to compare a Devonshire Pasty to one back home in Cornwall, though I won’t get into that debate now!
